Egg markets have spent most of the winter in the stratosphere, but in a surprising twist, large table egg prices have dropped by more than half from their record highs. Is supply finally catching up? That would be “awesome, baby!”—but unfortunately, that’s not quite the case.
In February, domestic table egg production was down 9% year-over-year, marking the lowest monthly output in over nine years. In fact, it was the lowest February production since the UCONN women’s basketball team kicked off their historic four-year championship run in 2013. So, what’s driving the recent price drop?
