So…are eggs swimming in oversupply? The production data says no. U.S. table egg output last month was slightly below a year ago and the smallest for that month since the Denver Broncos were marching toward their last Super Bowl title back in December 2015. What has changed is demand. Elevated prices appear to have done their job—curbing consumption. In fact, USDA data shows per-capita egg consumption declined more than 4 percent last year, falling to a multi-year low. Imagine that.
